Smoked local trout and Cornish crab mousse, served with dressed
Winter leaves
with a lemon and horseradish sour cream
Smoked salmon tartare with beetroot and dill chutney and a poached
quails egg
Upton Smokery chicken and Adeys Farm ham hock terrine served with
a 4 month aged plum and apple chutney and fresh baked bread
Salad of Winter pear, artichoke and beetroot with Cerneys goats
cheese, wood fired croutons and a balsamic vanilla dressing
Mains
Roasted Woolley Park Farm free-range bronze turkey breast, with a chorizo, chestnut
and rosemary seasoning, roast potatoes and Duchy vegetables, Pickford’s bacon
and sausage rolls with a rich turkey jus
Pan-fried Willesley fillet steak, served on crushed new potatoes
with coarse grain mustard, sautéed green cabbage with Holy Smoked cheese and
bacon cream
finished with a light black pepper jus
Half a roast Madgetts duck with braised Winter red cabbage,
caramelised shallot and parsley champ and served with a Cotswold citrus whisky
jus
Grilled Cornish brill fillet, served with a mussel, chilli and
coriander consommée with Franceline potatoes and winter greens
Chef's home made pappardelle with a roast pumpkin sauce, cavolo
nero and oyster mushrooms, served with a dressed Winter leaf salad and garlic
foccacia
Desserts
Chef's home made Christmas pudding, made with Ruth’s marmalade and
Uley bitter, served with Cotswold damson brandy sauce
Trio of chocolate desserts: chocolate and beetroot cake, dark
chocolate and raspberry brandy tart and a white chocolate cheesecake with Ceri’s
raspberry ice cream and a red berry coulis
Hayles warm apple and pear tart scented with nutmeg and cinnamon,
served with a rich vanilla cream
Cotswold trifle with dark chocolate and coffee sponge, apple
puree, home made raspberry and cassis jelly, topped with Cotswold vanilla cream
and served with brandy snap biscuits
Cotswold cheese platter with Hampton blue, Cotswold Brie,
Godsell's 3 virgins, Rachel's goat cheese and Wiltshire loaf served with
hedgerow jelly,
